<p>At this time every Peterson remote pilot kit comes standard with a basic on/off remote transmitter and receiver, greatly simplifying your control system decision. If you would like to upgrade to a deluxe remote you will end up with both the basic remote and the deluxe remotes, Peterson does not offer any remote pilot kits which come standard with a Deluxe Remote. </p>
<p>Below is a simple break down of each of the Peterson Remote controls and the functions they are capable of. We do not recommend upgrading to any of the deluxe remote controls if you own a Vented Peterson Log Set. The thermostatic feature will not have the desired impact with a vented unit, this feature is only useful on the Vent Free Logs Sets.</p>

a built in front flame burner. The wedge shaped rectangular pan has a main<br />
burner tube going down the middle and a smaller front flame burner that<br />
&#8220;Ts&#8221; off from the main burner. The additional front flame burner<br />
allows you to position the burner directly beneath the logs while giving you<br />
a nice bed of glowing embers with flames lapping up around the front log and<br />
up between the middle logs.</span></p>

<p class="MsoNormal"><span style="font-family:Tahoma;">Triple T burners have an extra burner that T’s off the main burner </span><span style="font-family:Tahoma;">and goes beneath the front log where all of the glowing embers are, so you </span><span style="font-family:Tahoma;">get a much nicer bed of glowing embers as well as an ample amount of flame </span><span style="font-family:Tahoma;">coming up and around the logs.</span></p>

The simple fact of being able to fit the set in the fireplace is not the only objective.</p>
<p>As nice as it may look to have a log set that goes from wall to wall with-in your fireplace, you will need a certain amount of breathing room to center the set after taking into consideration the space needed to make your gas connections. Not providing enough space for the gas log set can create a difficult install, an off center log set, operational issues, and even potentially ruin a control valve.</p>
<h2>Measuring Your Fireplace</h2>
<p>Each of the Peterson Real Fyre log and burner sets will have several measurements listed with it to help guide you in fitting your log set.</p>
<p>The first step is to measure your existing fireplace for opening width (A), height (B), rear width (C) and depth (D) </p>
<p>Be sure to only measure the usable floor space of your fireplace.&nbsp; There may be areas that are intended to be used for door installation, fire screens or space that is intended to be purely cosmetic.&nbsp; Comparing these measurements against the measurements provided with each log and burner set will allow you to see if a certain size log set with a specific ignition system will fit in your fireplace.</p>
<h2>Peterson Gas Log Sizing Example</h2>
<p>As an example lets say you are interested in purchasing a 24&#8243; Charred Cedar Vented Log Set / G45 Triple T Millivolt Pilot Natural Gas Burner with Remote.&nbsp; This log and burner set has the following listed Minimum Hearth Dimensions.&nbsp; Width at the mid point of the fireplace &#8211; 36&#8243;&nbsp; Height &#8211; 18&#8243; Depth &#8211; 14&#8243;.</p>
<p>And your fireplace measurements are as follows:&nbsp; Opening Width (A) &#8211; 42&#8243;&nbsp; Height (B) &#8211; 22&#8243; Depth (D)-14&#8243; Rear Width (C) &#8211; 32&#8243;</p>
<p>By comparing the two sets of dimensions it becomes clear that this log set will fit within this fireplace.&nbsp; There are 4&#8243; of additional height over what is needed.&nbsp; The depth is exactly the same at 14&#8243;. And taking the opening width (42&#8243;) and rear width (32&#8243;), adding them together (74&#8243;) and dividing by 2 you get the mid-point width of the fireplace which would be 37&#8243;.</p>
<p>These measurements provided from the manufacturer are meant to allow for safe and effective use of your Peterson Real Fyre Gas Logs.</p>

<p>Infrared burners, often used by restaurants, quickly cook steaks and other thick meats by heating the meat directly, while your gas and charcoal grills use hot air circulation to cook the meat. <a href="http://www.firemagicshop.com/buy/pc/showsearchresults.asp?pageStyle=H&amp;resultCnt=10&amp;keyword=infrared+burners&amp;submit=Go"> Infrared burners,</a> available on all of our Fire Magic Grills, allow you to immediately sear the outside of meat, locking in the moisture and giving the meat a charcoal-like taste.</p>
<p>These infrared burners heat up and cook food quickly so, here are some tips you&#8217;ll want to know before using them.</p>
<p><strong>1. Fire up your grill.</strong><br />
Turn on the gas according to the instructions for you particular Fire Magic Grill and turn on the infrared burner. Your infrared burner will heat up quickly, in just one to two minutes, cutting the grill time down.</p>
<p><strong>2. Place the meat on the grate above the infrared burner.</strong><br />
Wait about one minute, then flip the meat and sear the other side. Infrared burners will reach high temperatures so, it&#8217;s best to use thick cuts of meat such as steaks and pork chops. Try to avoid using thinner cuts like fish and vegetables as they tend to char.</p>

<p><strong>3. Finish cooking the meat.</strong><br />
You have two options on how you can complete your dish. First, leave the meat on the infrared burner, flipping it every 30 seconds to one minute until it&#8217;s done. The meat will take no more than 4 to 5 minutes to cook with this method. Be careful using this method, as it will be much easier to overcook the meat.<br />
Second, you can move the seared meat to the non-infrared side of the grill and finish it off the traditional way. The meat will take a little longer to prepare, about 9-10 minutes, however it will be easier to control.</p>
<p><strong>4. Remove the meat from the grill and enjoy.</strong><br />
Clean up of your infrared burner is a snap! The burner reaches such a high temperature that most drippings evaporate as soon as they hit the grill burner. If you marinate or use heavy sauces on your meat, we recommend turning your infrared burner up to high when you are done. This will help burn off any sauce or food particles that may not have been burned off during the cooking process.</p>
<p>You can also do a deeper cleaning by removing the burner. Use a needle or pin to remove any debris blocking the air holes in the ceramic tiles. When your done, take a vacuum over the burner to remove any left over food particles and debris.</p>

<h2>Southwestern Style Rotisserie Pork Tenderloin</h2>
<p>Rotisserie cooking is a great way to extend the versatility of your Fire Magic Grill. All of our Echelon Series Grills include a heavy-duty rotisserie kit with high torque motor, stainless steel spit rod, spit forks and a counter balance. <p><b><u>Ingredients</b></u><br />
    * 2 whole pork tenderloins (app. 1 1/2 pounds)<br />
    * 2 garlic cloves (crushed)<br />
    * 1 tablespoon vegetable oil<br />
    * 5 teaspoons chili powder<br />
    * 1 1/2 teaspoons ground cumin<br />
    * 1/2 teaspoon salt</p>
<p><b><u>Directions</b></u><br />
1. Mix all ingredients (minus the pork) in a small mixing bowl. Coat tenderloins with mixture and cover and refrigerate for 2 &#8211; 24 hours.</p>
<p>2. Follow grill instructions and place tenderloins securely on spit. Turn on rotisserie and grill roasts over indirect heat for 30 minutes or until internal temperature is between 155 and 160 degrees F. </p>
<p>3. Let meat rest 8-10 minutes before slicing. </p>
<p><i>Makes 6 servings. Serve with grilled vegetables.</i></p>

<h2>Marinated Halibut with Mango Slaw</h2>
<p><b><u>Ingredients</b></u><br />
•	4  1&#8243;-2&#8243; thick halibut or grouper fillets<br />
•	2  tablespoons honey<br />
•	7  tablespoons fresh lime juice<br />
•	1/2  teaspoon red pepper flakes<br />
•	2  large garlic cloves (finely chopped)<br />
•	1  tablespoon vegetable oil (plus additional for grilling)<br />
•	1  ripe mango<br />
•	3  celery stalks (cut into julienne strips)<br />
•	3  scallions (dark-green part only (cut into 2-inch-long thin strips)<br />
•	1/4  cup packed fresh basil leaves (cut lengthwise into thin strips)<br />
•	1/2  pound shitake mushrooms (caps only, discard the stems)<br />
•	4  long metal skewers</p>
<p><b><u>Directions</b></u><br />
1. Marinated Halibut: Rinse fish and pat dry. Whisk together honey, 5 tablespoons lime juice, pepper flakes, garlic and oil in a glass dish just large enough to fit fish in a single layer. Coat the fish and marinate at room temperature, turning halfway through, for 20 minutes.</p>
<p>2. Mango Slaw: Peel the mango and starting from the outside moving in toward pit, cut into 1/8-inch-thick slices. Cut into julienne strips and transfer to a serving bowl along with celery, scallion, and basil.</p>
<p>3. Preheat grill and lightly oil rack. Thread mushrooms through length of caps onto skewers; season with salt and pepper. </p>
<p>4. Remove fish from marinade and season with salt and pepper. Grill mushrooms and fish, turning once, until  fish is cooked through and mushrooms are tender, about 7 minutes. Transfer fish to a serving platter. When cool enough to handle, remove mushrooms from skewers and thinly slice. </p>
<p>5. Add mushrooms and remaining 2 tablespoons juice to Mango Slaw; toss to combine. Salt and pepper to taste.</p>
<p><i>Makes 4 servings. Serve fish warm with slaw on the side.</i></p>

<h2>Southern Grilled Barbecued Ribs</h2>

•	4 pounds baby back pork ribs<br />
•	2/3 cup water<br />
•	1/3 cup red wine vinegar<br />
•	1 cup ketchup<br />
•	1 cup water<br />
•	1/2 cup cider vinegar<br />
•	1/3 cup Worcestershire sauce<br />
•	1/4 cup prepared mustard<br />
•	4 tablespoons butter<br />
•	1/2 cup packed brown sugar<br />
•	1 teaspoon hot pepper sauce<br />
•	1/8 teaspoon salt</p>
<p><b><u>Directions</b></u><br />
1.	Preheat oven to 350 degrees F (175 degrees C). Place ribs in two 10&#215;15 inch roasting pans. Pour water and red wine vinegar into a bowl, and stir. Pour diluted vinegar over ribs and cover with foil. Bake in the preheated oven for 45 minutes. Baste the ribs with their juices halfway through cooking.</p>
<p>2.	In a medium saucepan, mix together ketchup, water, vinegar, Worcestershire sauce, mustard, butter, brown sugar, hot pepper sauce, and salt; bring to a boil. Reduce heat to low, cover, and simmer barbeque sauce for 1 hour.</p>
<p>3.	Preheat grill for medium heat. </p>
<p>4.	Lightly oil preheated grill. Transfer ribs from the oven to the grill, discarding cooking liquid. Grill over medium heat for 15 minutes, turning ribs once. Baste ribs generously with barbeque sauce, and grill 8 minutes. Turn ribs, baste again with barbeque sauce, and grill 8 minutes.</p>
<p><i>Makes 8 servings. Serve with baked potatoes, corn and baked beans.</i></p>

<h2>Spicy Chicken with Grilled Pineapple</h2>
<p><b><u>Ingredients</b></u><br />
•	8  scallions (chopped)<br /> <br />
•	1  medium onion (chopped)<br />
•	3  garlic cloves (chopped)<br />
•	3  tablespoons cider vinegar<br />
•	2  tablespoons reduced-sodium soy sauce<br />
•	2  tablespoons vegetable oil<br /> <br />
•	1  habanero or jalapeno chile (chopped)<br />
•	1 1/2 tablespoons thyme leaves<br />
•	1  tablespoon packed brown sugar<br />
•	2  teaspoons allspice<br />
•	1/2  teaspoon ground nutmeg<br />
•	1/2  teaspoon cinnamon<br />
•	3 1/2  pounds chicken parts (thighs and drumsticks)<br />
•	1 fresh pineapple, app. 4 pounds<br />
•	2 1/2  tablespoons packed brown sugar</p>
<p>
<b><u>Directions</b></u><br />
1. Make sauce/marinade: Place first 12 ingredients in a food processor and puree until almost smooth. Transfer half of puree to a small bowl to be used as the sauce. Keep  the bowl chilled and covered.</p>
<p>2. Place remaining puree in a large heavy-duty resealable plastic bag with chicken and seal the bag, turning to coat well. Marinate, chilled, turning bag occasionally, at least 8 hours or overnight, placing bag in a large bowl to catch any leaks.</p>
<p>3. Preheat grill and lightly oil rack. Let chicken stand in marinade at room temperature 30 minutes before grilling. Meanwhile, cut sides and ends off pineapple. Cut crosswise into 15 slices about 1/4 inch thick. Sprinkle one side of each slice with 1/2 teaspoon packed light brown sugar. Place sugared side down on rack and grill, turning once, until golden brown, about 3 minutes. Transfer to a platter, alternating slices with scallion garnish.</p>
<p>4. Remove chicken from marinade and grill over moderate heat, turning occasionally, until cooked through, approximately 35 to 45 minutes. Transfer to platter with pineapple and serve with remaining sauce on side.</p>
<p><i>Makes 6 servings. Serve with a simple side salad.</i></p>

<h2>Moroccan Spiced Lamb Kabobs</h2>
<p><b><u>Ingredients</b></u><br />
•	1/2 cup olive oil<br />
•	1/4 cup balsamic vinegar<br />
•	1 tablespoon orange juice<br />
•	1 tablespoon lemon juice<br />
•	2 tablespoons grated orange zest<br />
•	1 tablespoon lemon zest<br />
•	1 tablespoon honey<br />
•	1/4 cup finely minced onion<br />
•	1/4 teaspoon cinnamon<br />
•	1/4 teaspoon allspice<br />
•	1/2 teaspoon salt<br />
•	2 pounds lean lamb, cut into 1 1/2 inch cubes</p>
<p><b><u>Directions</b></u><br />
1. In a small bowl, combine all ingredients except lamb cubes and mix well. Place lamb cubes on 4-6 metal skewers. 2. Heat grill to medium high and place kabobs on grill. Generously brush kabobs with sauce and turn. Continue to turn and baste until lamb is cooked to taste; 10 minutes for medium rare, 12-14 minutes for medium.</p>
<p><i>Makes 4-6 servings. Serve with couscous, pita bread and tzatziki sauce.</i></div>
